Finding Bait Schools with Electronics

Why Bait Comes First
Offshore fishing out of Sydney rewards anglers who stop hunting the target species and start hunting the food. Kingfish, bonito, snapper, mackerel tuna and marlin all follow the same rule: they hold where bait holds. On a good morning off the Sydney coast you can idle over kilometres of empty blue water, then find a single ball of slimy mackerel stacked on a reef edge with three or four arches sitting under it. That one mark is worth more than a full day of blind trolling.
Electronics are simply a way of seeing that bait before you commit fuel and time. A sounder, a chartplotter with saved marks, and your own eyes on the surface work together. None of them replaces reading the conditions — tide, swell direction and wind are what push bait onto a structure in the first place.
Setting Up Your Sounder Properly
Most sounders are left on factory auto settings, which is fine for depth but poor for bait detection. A few adjustments make a large difference:
- Run manual gain slightly higher than auto so small baitfish returns show as speckle rather than being filtered out.
- Choose the right frequency. High frequency (around 200 kHz and above) gives sharp detail on bait in shallower reef water; lower frequency (50–83 kHz) covers a wider cone in deeper water off the shelf.
- Reduce noise rejection when searching. Heavy filtering smooths the screen and can erase the fine haze that is actually a scattered bait layer.
- Watch your speed. Above roughly ten knots most transducers lose clean bottom lock. Search at trolling speed or slower when you are genuinely reading water.
Learn what each return means. Tight balls with a clear top and bottom edge are usually yellowtail or slimies. Long thin smudges near the surface are often anchovy or whitebait. A dense band sitting hard on the bottom on a reef edge frequently means bait pinned by predators below.
Side Scan and Down Imaging
Side imaging is most useful in the 10–40 m range over Sydney's inshore reefs and gravel patches. It lets you sweep a wide corridor either side of the boat instead of only what is directly under the hull, so you can find the edge of a bait school without driving straight over it and spooking it. Down imaging gives the photo-like picture that helps separate bait from structure such as kelp fingers or a wreck.
Where Bait Sits Around Sydney
Bait concentrates on changes: reef edges, pinnacles, drop-offs, current lines, headland corners and the wash zones outside the harbour mouths. Off Sydney, look at the inshore reefs first for yellowtail and slimies, then move to the wider grounds and shelf edge where the bait layer often sits deeper and follows temperature breaks.
- Current lines and colour changes — anything that traps drifting plankton will hold small bait, then bigger bait, then predators.
- Upcurrent faces of reef — bait usually stacks where water lifts over structure.
- Bird activity — terns working tight circles almost always sit above a school your sounder will confirm.
Tide, Swell and Wind Effects
Electronics tell you where bait is now; conditions tell you where it will be. Around the last of a run-out and the first two hours of the flood, current pushes bait against reef edges and makes schools easier to find and easier to catch. Slack water often sees schools disperse and drop lower in the column.
Swell matters just as much. A moderate south-east swell puts white water on eastern headland faces and stirs bait off the wash, while a big swell can flatten the bite by turning the inshore water dirty. Light offshore winds in the morning keep the surface clean so you can spot flicking bait and working birds, then a strong nor'easter through the afternoon breaks up the surface and makes visual searching much harder — that is when the sounder does all the work.
Turning Marks Into a Long-Term Plan
- Save a waypoint every time you find bait, and note the tide stage, wind and swell in your log or in the waypoint name.
- Return to the same marks on similar conditions rather than similar dates. Patterns repeat with the water, not the calendar.
- Bait a school before you fish it — collect livies while conditions allow, then work the structure nearby.
- Do not chase every mark. Two or three reliable schools that you know well beat twenty random points.
Safety and Common Sense Offshore
Searching for bait can pull you further offshore than planned. Check the forecast before you leave, watch for a rising afternoon sea breeze, log on with the local marine rescue base, and keep an eye on swell period as well as height — long-period swell breaks heavily over shallow reef and bommies. If the bar or headland looks marginal on the way out, it will be worse coming back.
